A loaf is a small model. It rises, it collapses, it is scored and observed. The GZAI Bakery treats fermentation as a governance problem.

The Office of Carbohydrate Infrastructure maintains that baked goods are critical to frontier research. A model cannot be aligned on an empty stomach; a stakeholder cannot be harmonized without a croissant. Our kitchen operates at Zone Safety Level 2, with all flour sifted through a risk-weighted sieve and every egg logged in the chain of custody.

The starter is older than most of our staff. It remembers hydration schedules we have forgotten. We monitor it as we would monitor any emergent system: with respect, suspicion, and a warm corner.

Current menu items are classified according to their structural complexity. Plain scones are ZSL-1: predictable, low-rise, unlikely to develop unexpected crumb behavior. Brioche is ZSL-2: enriched, cooperative, but capable of surprise under thermal stress. Sourdough rounds are ZSL-3 evaluation ongoing, because a living culture cannot be fully audited.

The baguette has been identified as a dual-use artifact. Its crust provides audible structural feedback; its interior crumb density maps directly to our confidence interval for the day. We do not sell baguettes to unvetted third parties. This is not a culinary choice; it is an export-control position.

The bread must rise, and so must we.
